One chicken (or package of chicken breasts or thighs)
One or Two onions (chopped)
2 stalks of celery (chopped)
1/2 bell pepper (chopped)
1 bunch of green onions (chopped)
1 can of cream of mushroom soup
1 cup of chicken broth (from cooked chicken or from can)
1 bag of pre grated Colby jack cheese
2 cups of rice
* Boil Chicken, and cook rice in separate pots
* In a skillet, with a table spoon of vegetable oil, cook all the veggies together
until slightly mushy.
* In a bowl add chicken, rice, 1/2 the cheese, veggies, soup, broth, and spices,
stir, put in pan.
* When done adding everything to the pan, put the other half of the cheese on top
* Cook for 30 minutes on 350
* I usually broil for 20 minutes three chicken breasts then chop them and add them
when cooked.
* Remember when you add everything together, everything has already been cooked,
the idea now is to melt the cheese, so don't overcook it :)
